This is evident in our daily lives, as restaurant menus now always clearly indicate the allergens in each dish, something that was not so common a few years ago. But what is the reason? Although there is no completely contrasted hypothesis, we do know that our diet is changing rapidly, moving towards the consumption of ultra-processed foods, with a multitude of preservatives, flavorings, colorings, etc. <\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>This, together with overexposure to certain foods, such as milk or wheat, are two factors that determine a growing rate of food allergies and intolerances. In this article we will look at what they are, what the genetics behind them are, and how the unique journey we are taking with <a href=\"https:\/\/adntro.com\/en\/\">ADNTRO<\/a> and our <a href=\"https:\/\/adntro.com\/en\/\">DNA test<\/a>.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Definition of food allergy and intolerance and the difference between them<\/strong><\/h2>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The <strong>allergy is the immune response<\/strong> that occurs when the body comes into contact with a foreign agent or a certain food (which is called an allergen), which is safe for the normal population. This immune response consists of an inflammatory process triggered by the production of IgE-type antibodies, and causes symptoms of varying severity, ranging from minor irritation to respiratory problems and anaphylactic shock.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The <strong><a href=\"https:\/\/adntro.com\/en\/genetic-intolerance-test\/\">food intolerances<\/a><\/strong>instead, they are <strong>non-immune adverse reactions<\/strong> produced when the body is not able to process or digest a certain food compound, which can cause digestive problems of varying severity, the most frequent being abdominal pain, gas and diarrhea. Depending on what causes them, we distinguish intolerances of metabolic or enzymatic type, pharmacological and of undetermined cause.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Therefore, the main difference between allergy and food intolerance is that the former activates an immune response, and the latter does not.&nbsp;<\/strong><\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>In addition, in both cases the ingestion of the food in question (allergen) is responsible for the subsequent symptoms, but in the case of intolerances, many of those affected can tolerate small amounts of the food without causing great discomfort. The reactions that are triggered when an intolerant to a certain substance ingests it are dose-dependent, since the symptoms become more evident the higher the ingested dose is.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"626\" height=\"417\" src=\"http:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image1.jpg\" alt=\"food intolerances\" class=\"wp-image-3426\" srcset=\"https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image1.jpg 626w, https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image1-300x200.jpg 300w, https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image1-18x12.jpg 18w\" sizes=\"(max-width: 626px) 100vw, 626px\" \/><\/figure>\n<\/div>\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Genetics of allergies and food intolerances&nbsp;<\/strong><\/h2>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Allergic processes present a family accumulation, which means that a significant number of allergic patients have a family history of allergy. This suggests, therefore, the <strong>existence of a genetic predisposition to allergy<\/strong>. However, it has been observed that the inheritance of allergy does not follow an <a href=\"https:\/\/adntro.com\/en\/blog\/genetic-curiosities\/the-laws-of-mendel\/\">Mendelian pattern<\/a> The appearance of the disease is determined by several genes with additive effects (polygenic) that also interact with environmental factors.\u00a0<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Regarding intolerances, each of them must be considered separately, since, although there is a genetic component in all of them, this will be different depending on the type of intolerance that we analyze (metabolic, pharmacological, etc.).&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What nutritional aspects can we discover from what we carry in our DNA?&nbsp;<\/strong><\/h3>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The journey we embark on with the <a href=\"https:\/\/adntro.com\/en\/genetic-nutritional-test-report\/\">nutrigenetic test<\/a> The ADNTRO program gives us information about our greater or lesser predisposition to develop allergies to peanuts (and very soon also to shellfish and egg) and <a href=\"https:\/\/adntro.com\/en\/blog\/nutrigenetics\/gluten_gluten_lactose_fructose_intolerance\/\">lactose, fructose and gluten food intolerances<\/a>. But how is this predisposition calculated?<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img decoding=\"async\" width=\"1024\" height=\"576\" src=\"http:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image2-1024x576-1.jpg\" alt=\"nutritional aspects with additive\" class=\"wp-image-3425\" srcset=\"https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image2-1024x576-1.jpg 1024w, https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image2-1024x576-1-300x169.jpg 300w, https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image2-1024x576-1-768x432.jpg 768w, https:\/\/adntro.com\/wp-content\/uploads\/2021\/08\/image2-1024x576-1-18x10.jpg 18w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/div>\n\n\n<p>To explain, let&#039;s take the example of lactose intolerance. Lactose intolerance is the main example of metabolic intolerance and is caused by a deficiency of the enzyme lactase, responsible for breaking down lactose into galactose and glucose.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The first step <strong>is to locate within a given gene the position of the genetic variants involved in the development of lactose intolerance.<\/strong> To do this, association studies (better known as <strong>GWAS<\/strong>, by its English acronym <em>Genome-wide association study<\/em>) included in the NHGRI catalog (<em><a href=\"https:\/\/www.genome.gov\/\" target=\"_blank\" rel=\"noreferrer noopener\">National Human Genome Research Institute<\/a><\/em>).&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The <a href=\"https:\/\/youtu.be\/Fizghv_PyTA\" target=\"_blank\" rel=\"noreferrer noopener\">GWAS-type studies<\/a> they are based on comparing the genotype of family nuclei that present a certain trait or pathology (in our example, lactose intolerance) with the genotype of the control population. In this way, it is possible to locate genetic variants whose frequency is higher in patients (with intolerance) than in controls.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Once the prevalent genetic variants in people with intolerances have been located, the next step is to analyze a person&#039;s genotype. <\/strong>In doing so, we will look at the variant associated with lactose intolerance (identified thanks to the GWAS studies) and we will verify whether that person has the prevalent variant in the group of patients or the prevalent variant in the control population. That&#039;s how <strong>we can determine your greater or lesser genetic predisposition<\/strong>, respectively, to develop said food intolerance.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>A type of genetic variant widely used in GWAS-type studies are the <a href=\"https:\/\/adntro.com\/en\/blog\/learn-genetics\/what-are-snps\/\">SNPs<\/a> (single nucleotide polymorphisms), which are single base genetic variants. Continuing with our example of lactose intolerance, at ADNTRO we analyzed two SNPs located in the gene <em><a href=\"https:\/\/medlineplus.gov\/genetics\/gene\/mcm6\/\" target=\"_blank\" rel=\"noreferrer noopener\">MCM6<\/a><\/em>, which is responsible for regulating the amount of lactase generated by the body. People whose genotype matches the SNPs associated with intolerance will have a greater predisposition to suffer it than those whose genotype does not match.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Fructose intolerance or fructosemia, on the other hand, consists of a genetic disorder present from birth, caused by a deficiency of hepatic fructose-1-phosphate aldolase, also called the enzyme aldolase B. The gene that codes for this enzyme is called <em><a href=\"https:\/\/medlineplus.gov\/genetics\/gene\/aldob\/\" target=\"_blank\" rel=\"noreferrer noopener\">ALDOB<\/a>, <\/em>and the presence of variants in its sequence allows to identify people with fructose intolerance.<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The case of gluten intolerance or celiac disease is more complex, since it is a permanent condition, whose development is influenced by genetic, environmental and immunological factors, and therefore it is not entirely correct to classify it as a food intolerance.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Since our relationship with food is very important and special, and knowing that our genes control the way we digest, absorb and use nutrients, we invite you to come on board and start this journey with us.&nbsp;<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Bibliography<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dr Francisco Arasa and Dr. Santiago Garc\u00eda Tornel.
